Chocolate Chip Cupcakes
Cupcake
1 ½ cups flour
1 cup sugar
1 tsp baking soda
½ tsp salt
¼ cup cocoa
1 cup water
½ cup oil
1 Tbs vinegar
1 tsp vanilla
Filling
8 oz cream cheese, softened
1 egg
½ cup sugar
1 cup chocolate chips
Pinch of salt
Combine flour, sugar, baking soda, salt, and cocoa. Stir in water, oil, vinegar, and vanilla. Beat until mixture is smooth. Fill paper-lined cupcake tins half full. Then beat cream cheese, egg, sugar, and a pinch of salt. Fold in chocolate chips. Put 1 heaping teaspoon of the filling mixture into the center of each cupcake. Bake at 350 degrees for 25-30 minutes.
